Ok everyone!! Fanny wants recipes!! Post your favorites here to share with anyone that wants them. Here are a few of my favorites for the holidays.

The Best Pumpkin Bread!!
Shylah's Own Recipe

16 oz pumpkin puree (about 2 cups)
1 cup vegetable oil
4 eggs beaten...not spanked
3-1/2 cups self raising flour
3 cups white sugar
1-1/2 tsp baking soda
1-1/2 tsp salt
1-1/2 tsp allspice
1-1/2 tsp nutmeg
2 tsp cinnamon
¼ tsp cloves
1tsp baking powder
½ chopped nuts if desired

Combine pumpkin, oil and eggs. Sift together dry ingredients. Combine the dry ingredients into the pumpkin mixture, blending slowly and thoroughly
Pour into 3 one pound loaf pans that have been well greased and floured.
Bake for one hour at 300 degrees F or 150 degrees C

SNICKERDOODLES ( makes 4 dozen)

2-3/4 cups all purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
8 tablespoons (1 stick) unsalted butter (don't use margarine, it has too much water)
1/2 cup vegetable shortening
1-3/4 cups sugar
1 tablespoons cinnamon
2 large eggs

1. Preheat the oven to 400 F with one rack in top third and one rack in bottom third of oven. Line baking sheets with baking mats or parchment paper

2. sift together flour,cream of tartar, baking soda, and salt, set aside. In the bowl of an electric mixer fitted with a paddle attachment, combine butter, shortening and 1-1/2 cups sugar. Beat on medium speed until light and fluffy, aprox. 2 minutes. Scrape down sides of bowl. Add eggs and beat to combine. Add dry ingredients, beat to combine.

3. In a small bowl, combine remaining sugar and the cinnamon. Use a small ice cream scoop to form balls of the dough and roll in the cinnamon sugar. Place about 2 inches apart on the baking sheets. Bake until the cookies are set in center and begin to crack. (they will not brown), 10 minutes or less. Rotate the baking sheets after 5 minutes. The cookies should be soft inside.

This is my favorite recipe for APPLE CRISP!!! I have lots and lots of requests to make this and even have people buy apples and dropping them off to me so I'll make it for them...in case you haven't noticed...I love to cook

3 Cooking apples peeled and cored
2 teaspoons lemon juice
2 tablespoons water
1/2 cup honey or white syrup (I prefer the syrup but some like the honey due to allergies)
1 teaspoon cinnamon
3/4 cup brown sugar
3/4 cup flour
3/4 cup oats
4 tablespoons butter

Preheat oven to 175 C.
Lightly grease baking dish
Place the apples in the dish. Combine the lemon juice and the water and pour it over the apples. Drizzle the apples with the honey or syrup and cinnamon. If you prefer, you can add all the cinnamon you want.
In another bowl, mix the brown sugar, oats , flour and butter until crumbly. Layer this over the apples.
Bake for 25 to 30 min until the apples are tender and the topping is browned.

What is "white syrup" Shylah? Is it anything like light Karo, or more like a simple syrup?
wolfie loves Steve more than anything else in the whole world...even more than chocolate and lobster!

Shylah, I'm making the pumpkin bread today! Thanks.

With my diet changes this year, I discovered that I actually enjoy cooking (versus only popping things in the microwave ), so baking naturally was a progression for me. Just got my own oven fixed last night...after maybe ten years. (Have a small broiler/oven that worked until I got hooked on making cheesecakes now)

Anyway...for Fanny, with the pumpkin theme....I made this cake and everyone that has eaten it has said it's the best. (You honestly don't taste the butterscotch though.)

Butterscotch Pumpkin Cake

1 2/3 cups (11-oz. pkg.) NESTLÉ TOLL HOUSE Butterscotch Flavored Morsels, divided
2 cups all-purpose flour
1 3/4 cups granulated sugar
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup LIBBY'S 100% Pure Pumpkin
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
3 tablespoons powdered sugar, (optional)
Directions:
PREHEAT oven to 350° F. Grease 12-cup Bundt pan.

MICROWAVE 1 cup morsels in small, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted. Cool to room temperature.

COMBINE flour, granulated sugar, baking powder, cinnamon, salt and nutmeg in medium bowl. Stir together melted morsels, pumpkin, vegetable oil, eggs and vanilla extract in large bowl with wire whisk. Stir in flour mixture. Spoon batter into prepared Bundt pan.

BAKE for 40 to 50 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for 30 minutes; remove to wire rack to cool completely. Sprinkle with powdered sugar. Serve with Butterscotch Sauce.

FOR BUTTERSCOTCH SAUCE:
HEAT 1/3 cup NESTLÉ CARNATION Evaporated Milk in medium, heavy-duty saucepan over medium heat just to a boil; remove from heat. Add remaining morsels; stir until smooth. Return to heat. Stirring constantly, bring mixture just to a boil. Cool to room temperature. Stir before serving.


For the topping, I use a blend of one pkg. of 1/3 fat Cream Cheese, with the left over can of pumpkin though. Add about a half cup of suger to this, and it's the best frosting. I crush walnuts then, ontop of the frosting, once it's put on the cake. Yum!

AHEM...one Fruitcake commin up!!!!

* 1/8 cup chopped dried cherries
* 1/8 cup chopped dried mango
* 1/4 cup dried cranberries
* 1/4 cup dried currants
* 2 tablespoons chopped candied citron
* 1/4 cup dark rum
* 1/2 cup butter
* 1/4 cup packed brown sugar
* 1 egg
* 1/2 cup all-purpose flour
* 1/8 teaspoon baking soda
* 1/4 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/4 cup unsulfured molasses
* 2 tablespoons milk
* 1/4 cup chopped pecans
* 1/4 cup dark rum, divided
1. Soak cherries, mango, cranberries, currants, and citron in 1/4 cup rum for at least 24 hours. Cover tightly, and store at room temperature.
2. Preheat oven to 325 degrees F (165 degrees C). Butter a 6x3 inch round pan, and line with parchment paper.
3. In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, baking soda, salt, and cinnamon; mix into butter and sugar in three batches, alternating with molasses and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan.
4. Bake in preheated oven for 40 to 45 minutes. Cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.
5. Cut out one piece parchment paper and one piece cheesecloth, each large enough to wrap around the cake. Moisten cheesecloth with 1 tablespoon rum. Arrange cheesecloth on top of parchment paper, and unmold cake onto it. Sprinkle top and sides of cake with remaining rum. Wrap the cheesecloth closely to the surface of the cake, then wrap with paper. Place in an airtight tin

I beg your pardon, Ms. Shylah. Maybe I should have just remarked on how multi-talented you are. Does anyone here like fruitcake? I have to admit, if it is a good one with lots of nuts, I'll have a piece. Your recipe does sounds pretty inviting to me, all of them in fact.

Hee Hee...HUGSSSSSSSS TO Fanny!!

Personally, I hate fruitcake. But I use this recipe to make it for those that do like it.

I usually have a recipe for just about anything anyone ever wants. I've got cookbooks out the (insert naughty word here) or most of the time, I just roll them out of my head. I was asked how to make fry bread...well...I make it by throwing in this and that and I don't measure. But I did put together a recipe for it once...now...where did I put that??????
